On-the-Go Trail Mix

I'm always looking for healthy snack recipes that are good for on-the-go and busy schedules. I love homemade trail mix because I can literally whip it up in less than 5 minutes and it's loaded with healthy nut & seeds that keep me fuller longer.

You can really put whatever you want in trail mix. This recipe has organic pumpkin seeds, almonds, cashews, walnuts, and Lily's chocolate chips. You can add in different things like peanuts, sunflower seeds, and dried fruit (without the added sugar.) Eat it by the handful or use it as a topping for yogurt, whole-grain pancakes, or oatmeal.

The amount of each ingredient you use really depends on how much you want to make. I put in equal parts of everything. For a smaller batch use about 1/2 cup or for a larger batch use about 1 cup. Experiment and see what works for you. If you're looking for a natural way to sweeten it up, try adding a packet of pure stevia to the mix. Make sure it's pure stevia like this brand. Many brands found in stores contain "fillers" of some kind. Not only does this defeat the purpose of using stevia as an alternative, it also alters the flavor and causes a "bitter" aftertaste.


1/2-1 cup of organic pumpkin seeds

1/2-1 cup of organic almonds

1/2-1 cup of organic walnuts

1/2-1 cup of organic cashews

1/2-1 cup of Lily's Vegan Chocolate Chips, Stevia Sweetened

Mix everything together in a bowl. Add some stevia to sweetened it up, if desired. Store mix in a gallon sized bag or in individual snack bags either in the pantry or refrigerator.
