Give me all the avocados!! I seriously can't get enough. To me, avocados should basically be their own food group. In all seriousness though, I get asked all the time about healthy snack ideas. One of my favorite go-to snacks is homemade guacamole. I usually pair it with sliced cucumber or other veggie of choice, but there are times when I like to splurge and have some Siete tortilla chips or almond flour crackers. These are just my preferences though, as I prefer not to eat gluten or corn when it isn't necessary. If corn or gluten doesn't bother you, then go for some organic tortilla chips or whole grain crackers!
This recipe was actually inspired by my aunt. She makes thee best guacamole. I change it up a little bit every time I make it, but for the most part the base stays the same. Oh, and you want to know the secret to reallllyyy good guacamole? It's pomegranate. No, seriously. Add some pomegranate the next time you make guac and you won't regret it! Unless you don't like pomegranate, in that case, you might regret it.
Make this is easy enough! I purchase organic whenever possible. Slice the avocados, dice the tomato and onion, throw it all together in a bowl and viola!
2 organic roma tomatoes
½ organic red onion
Lemon juice to taste
Sea Salt to taste
*Don't forget to add pomegranate if you really want to spice things up! ;)
1. In a large bowl, add the avocado, tomato, and onion. Stir until well mixed. You might want to mash up the avocado a little.
2. Add lemon juice to taste. Sprinkle a generous amount of sea salt.
