Homemade Breakfast Parfait




The other morning my husband decided that he wanted parfaits with breakfast. After informing him that parfaits usually included granola and that we did not have any, he took matters into his own hands.


He grabbed every nut and seed he could find in the fridge and mixed them all together in a bowl. He added some quick oats and stevia to sweeten it up. What he was left with was a surprisingly delicious alternative to traditional granola.


We put some Unsweetened Coconut Yogurt in a bowl, topped it with some Organic Berries and the "granola" mixture, and had ourselves a delicious breakfast parfait. If you're looking to a simple, quick, light yet satisfying dish to add to your breakfast menu, I highly recommend giving this a try!


The ingredients where not measured out. We just used enough nuts and seeds to feed two people. All of our ingredients were Organic.


Granola Mixture

Pumpkin Seeds

Sunflower Seeds

Walnuts

Quick Oats

Stevia (1 packet)


Mix all the ingredients in a small bowl until well mixed.


Fill a bowl with 1 cup of yogurt. We used Unsweetened Coconut Yogurt. Top with mixed berries of choice. We used raspberries and strawberries. Then sprinkle with the granola mixture and enjoy!
